The team that represented the United States in the 2011 La Coupe du Monde de de la Patisserie was composed of Chef Bill Foltz, Chef Frania Mendivil, Chef Jean-François Suteau, and Chef Yoni Morales.
The 2010 Tryouts
Pastry chefs from across the country submitted their applications and portfolios for the chance to become one of the eight finalists whose artistry was recognized on Saturday April 17th 2010 at the Secchia Institute of Culinary Education of Grand Rapids Community College in Grand Rapids, Michigan.
Our panel of internationally acclaimed pastry chefs judged the finalist’s plated desserts, chocolate tortes, chocolate and sugar work exhibits to determine the composition of the three-member team that will represent the United States at the 2011 Coupe du Monde de la Patisserie on Sunday January 23rd 2011 in Lyon, France. They were selected on the ability of their unique skills and attributes to represent the best in the American pastry art. As a team, their individual talents combines tremendous technical and organizational abilities with years of national and international competition experience.
